Suji Ka Halwa Recipe | Sooji Halwa | Authentic Temple Style Rava Halwa with step-by-step photo and video recipe. Rava or semolina is perhaps one of the most important ingredients in Indian cuisine. It is used to prepare a myriad of dishes including breakfast, sweets, dessert, and even main course meals. With respect to dessert there are so many types and ways, it can be done, but the most common or popular choice is the suji ka halwa recipe known for its taste and simplicity.

In my blog, I have posted quite a few types of rava halwa which may have been referred to as sheera, kesari bath etc. But this recipe is an authentic halwa recipe that is typically severed in temples or prepared and served as prasadam for auspicious occasions. I had posted this previously, with just semolina, sugar, and ghee. However, I have re-created my old video with additional ingredients to make it more rich and creamy. Basically, I have added milk and Kesar combo which makes it more creamy and attractive in appearance. In other words, the halwa is prepared with saffron colour rather than just brown colour. I personally like it this way which can be easily served for any occasion. Do try this new way of preparing the traditional and authentic rava halwa and let me know if you liked it.

Firstly, the halwa is traditionally prepared in medium-coarse sooji or rava for the best consistency. Basically, it is the same rava used for upma or popularly known as bombay rava. Do not try fine rava or bansi rava as they may never yield the best consistency. Secondly, to make perfect sheera the simple ratio of 1:1:1 of rava, ghee, and sugar. This is easy and simple to follow but if you feel it may end up with too much sweetness, you may reduce the sugar (i have added ¾ cup of sugar here). Lastly, adding Kesar or milk is optional and you may skip it if you do not prefer it. As an alternative to it, you may add milk powder or even cooking cream for better taste and richness.

Ingredients

  • 1 cup ghee / clarified butter
  • 2 tbsp almonds
  • 2 tbsp cashew
  • 2 tbsp raisins
  • 1 cup rava / semolina / suji, coarse
  • 2 tsp besan / gram flour
  • 1 cup milk
  • 2 cup water
  • 2 tbsp kesar water
  • ¾ cup sugar
  • ¼ tsp cardamom powder

Instructions

  • firstly, in a large kadai heat ¾ cup ghee. add2 tbsp almonds, 2 tbsp cashew and 2 tbsp raisins.

  • roast on low flame until the nuts turn crunchy and golden brown.

  • keep the fried nuts aside.

  • now add1 cup rava, 2 tsp besan and roast on low flame.

  • roast until the rava turns aromatic and golden brown.

  • in another saucepan, take1 cup milk, 2 cup water and 2 tbsp kesar water. i have soaked few strands of kesar in warm water for 10 minutes.

  • stir occasionally, and get the milk to a rolling boil.

  • pour the boiling milk over roasted rava and mix continuously.

  • keep stirring until the rava starts to absorb the milk and thickens.

  • cover and simmer for 3 minutes or until the milk is completely absorbed.

  • further, add ¾ cup sugar and mix well until the sugar dissolves.

  • add in fried nuts,¼ tsp cardamom powder, and ¼ cup ghee.

  • mix well making sure everything is well combined and the suji is soft and fluffy.

  • finally, enjoy suji halwa topped with more ghee if required.

  • firstly, make sure to roast the rava really well, else the sheera will not taste good.
  • also, adding 2 tsp besan makes the halwa very rich and tasty.
  • additionally, once the milk is added, make sure to stir continuously, else there are chances for lumps formation.
